Cantina / Cellar
The wine ferments with indigenous yeasts in stainless steel tanks. It’s then racked into used large chestnut casks (botti grandi), which are filled about 80%. A layer of flor (yeast) starts to form on the surface of the wine after a few days, which creates an environment of slow oxidation. The flor naturally develops as a thicker layer in some of the botti (thus less oxidation) and as a thinner layer in others (more oxidation). The wine spends about three years in botti, after which it’s racked into stainless steel tanks again for a few months and is then bottled.

Affinamento / Élevage: 300, 400, and 500 liters used chestnut botti.
