Fermentazione alcolica / Alcoholic fermentation:
White varieties are pressed in whole bunches and carry out the spontaneous fermentation in steel fermenters without temperature control. After the fermentation the wine remains on its lees for about 5 months. The red varieties spontaneously ferment with the whole bunches for about 15-20 days in fiberglass tanks, with three daily manual punching downs.
Fermentazione malolattica / Malolactic fermentation: Native bacteria, in the spring after the alcoholic fermentation.
Affinamento / Élevage: 12 months in 1000/1200 liters stainless steel and fiberglass tanks; 12 months in bottle. Red and wine masses are assembled 3 months before bottling. Refinement in bottle for three months.
