Produttore / Producer: Antica Casa Vinicola Scarpa has been producing traditional wines in the Monferrato hills of southeast Piemonte since 1854. But it was Mario Pesce, admired by both Giacosa and Gaja, who made Scarpa’s reputation in the second half of the 20th century. Traditional sometimes means ‘rustic’, but that’s not the case here. A very present gusto della casa (house style) produces elegant wines with arrow-like acidity and well-aged tannins. In the 21st century, Scarpa continues to produce each year small quantities of more than a dozen wines from 10 different grape varieties and to release gradually wines from its ample library of bottles going back to the 1960s.

Ingredienti / Ingredients: white wine, sugar, alcohol, natural flavors.
Vitigni / Varieties: 80% Cortese from Canelli, Santo Stefano Belbo and Cossano Belbo and 20% Moscato d’Asti DOCG.
Erbe officinali / herbs: All the herbs are grown in Pancalieri, a town near Torino. Among them, some of the most important are: Angelica sylvestris or wild angelica seeds, citrus aurantium or bitter orange peel, artemisia absinthium or wormwood, elettaria cardamomum or green cardamom seeds, Cinchona officinalis or quinine bark, Swertia chirata bough, Coriandum sativumor coriander seeds, Inula helenium horse-heal root.
Zucchero / sugar: Cane sugar.
Alcol / alcohol: Alcohol from cane sugar molasses.
Processo / Process: All the herbs are dried and then ground with an old hammer mill. The ground herbs are placed on a grill inside a closed loop infuser. The infusion or cold extraction takes place for 20 days at the room temperature. During the infusion an hydroalcoholic solution percolates on the herbs and allows to extract all the herbs’ aromas. When the liquid extract is ready it’s left for 10 days in order to naturally decant the solid parts.
Miscelazione / Blending: The liquid extract is blended with white wine, sugar and alcohol.
Chiarificazione, filtrazione / Clarification, filtration: The blended product is decanted at cold temperatures in stainless steel vats and filtered with a panel filter.
Affinamento / Élevage: At least 6 months in stainless steel vats and 2 months in bottle.
Gradazione alcolica / Alcoholic %: 17%.
Tappo e bottiglia / Closure and bottle: T-stopper, 750 ml Bordeaux bottle embossed with the Scarpa logo.
